Ingredients
2 pounds Yukon Gold potatoes, peeled and cubed
4 tablespoons butter
2 cups green cabbage, finely shredded
4 green onions, sliced
1/2 cup whole milk
1/4 cup heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Add the cubed potatoes to a large pot and cover with cold water.
2. Bring the potatoes to a boil and cook for 15 to 18 minutes until fork tender.
3. Drain the potatoes and set them aside.
4. Melt 2 tablespoons of butter in a large skillet over medium heat.
5. Add shredded cabbage and green onions, then cook for 5 to 6 minutes until softened.
6. Heat milk and heavy cream in a small saucepan until warm.
7. Mash the cooked potatoes until smooth and fluffy.
8. Stir the warm milk mixture into the potatoes gradually.
9. Mix in the cooked cabbage, green onions, remaining butter, salt, and black pepper.
10. Stir until creamy and fully combined.
11. Garnish with fresh parsley and extra butter before serving warm.
