Description
This Holiday Red & Green Veggie Strata is a festive make-ahead breakfast casserole layered with eggs, hearty bread, cheese, and vibrant red peppers and spinach. It’s the perfect warm and savory start to a cozy Christmas morning.
Ingredients
8 cups cubed crusty bread (day-old preferred)
1 tablespoon olive oil
1 cup chopped red bell pepper
1 cup chopped green bell pepper
2 cups baby spinach, roughly chopped
1/2 cup diced onion
1 1/2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
8 large eggs
2 cups milk
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Butter for greasing dish
Instructions
1. Grease a 9×13-inch baking dish with butter.
2. In a skillet, heat olive oil over medium heat. Sauté onion and bell peppers for 3–4 minutes. Add spinach and cook until wilted, about 1–2 minutes more.
3. Spread half the bread cubes in the baking dish. Top with half of the veggie mixture and half of the cheese. Repeat layers.
4. In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper.
5. Pour egg mixture evenly over the layers in the dish. Press down lightly to help the bread absorb the liquid.
6. Cover and refrigerate overnight or let sit for at least 30 minutes.
7. Preheat oven to 350°F (175°C). Bake uncovered for 45–50 minutes or until golden brown and center is set.
8. Let cool slightly before slicing and serving.
Notes
You can prep this up to 24 hours ahead.
For a spicier version, use pepper jack cheese.
Great way to use leftover bread and customize with your favorite vegetables.
