Ingredients
**For the Steak & Marinade:**
1 1/2 pounds flank or skirt steak
2 tablespoons olive oil
2 tablespoons soy sauce
1 tablespoon lime juice
2 cloves garlic, minced
1 teaspoon honey
1/2 teaspoon chili flakes
Salt and black pepper, to taste
**For the Bowl:**
2 medium zucchinis, sliced into spears
2 cups cooked rice or cauliflower rice
1 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1 tablespoon olive oil
**For the Tangy Sauce:**
1/4 cup Greek yogurt or sour cream
1 tablespoon lime juice
1 tablespoon olive oil
1 teaspoon Dijon mustard
1 small clove garlic, grated
Salt and pepper, to taste
Instructions
1. In a small bowl, whisk together olive oil, soy sauce, lime juice, garlic, honey, chili flakes, salt, and pepper.
2. Add steak to a resealable bag or shallow dish and pour over marinade. Let sit for at least 30 minutes (or up to 4 hours for best flavor).
3. Preheat grill or grill pan over medium-high heat. Brush zucchini spears with olive oil and sprinkle with salt and pepper.
4. Grill zucchini for 2–3 minutes per side until charred and tender. Remove and set aside.
