Ingredients
4 boneless skinless chicken breasts
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup salsa verde
4 slices Pepper Jack cheese
2 tablespoons chopped cilantro
1 lime, cut into wedges
Instructions
1. Preheat grill to medium-high heat.
2. Brush chicken breasts with olive oil on both sides.
3. Season chicken with garlic powder, chili powder, cumin, salt, and black pepper.
4. Place chicken on the grill and cook for 5 to 6 minutes per side until fully cooked and grill marks appear.
5. Brush salsa verde generously over the chicken during the last 2 minutes of grilling.
6. Top each chicken breast with a slice of Pepper Jack cheese.
7. Close the grill lid and cook for 1 minute until cheese melts.
8. Remove chicken from the grill and let rest for 5 minutes.
9. Garnish with chopped cilantro and serve with fresh lime wedges.
