Ingredients
**For the Chicken:**
1 1/2 pounds boneless, skinless chicken breasts or thighs
2 tablespoons olive oil
1 tablespoon lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon paprika
Salt and black pepper, to taste
**For the Zucchini:**
2 medium zucchinis, sliced lengthwise into ribbons or rounds
1 tablespoon olive oil
Salt and pepper, to taste
**For the Creamy Herb Sauce:**
1/2 cup Greek yogurt or sour cream
2 tablespoons mayonnaise
1 tablespoon olive oil
1 tablespoon lemon juice
2 tablespoons fresh parsley, chopped
1 tablespoon fresh dill or basil, chopped
1 clove garlic, minced
Salt and black pepper, to taste
Instructions
1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken and marinate for at least 20 minutes (or up to 4 hours).
2. Preheat grill or grill pan to medium-high heat.
3. Brush zucchini slices with olive oil and season with salt and pepper.
4. Grill chicken for 4–5 minutes per side until cooked through (internal temperature 165°F / 74°C). Remove and let rest.
5. Grill zucchini for 2 minutes per side until lightly charred and tender.
6. In a small bowl, whisk together all creamy herb sauce ingredients until smooth and well combined.
7. Slice chicken and serve over grilled zucchini. Drizzle generously with herb sauce and garnish with extra herbs or lemon slices.
Notes
Make it dairy-free by using coconut yogurt and skipping the mayo.
Add cherry tomatoes or bell peppers for extra color and flavor.
