These Greek turkey meatballs with lemon herb rice are healthy, flavorful, and packed with Mediterranean spices for an easy and delicious dinner.
Ingredients
Greek Turkey Meatballs:
1 pound ground turkey
1/3 cup breadcrumbs
1 large egg
2 cloves garlic, minced
1/4 cup red onion, finely diced
1 tablespoon fresh parsley, chopped
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Lemon Herb Rice:
1 cup long grain white rice
2 cups chicken broth
1 tablespoon olive oil
1 tablespoon lemon juice
1 teaspoon lemon zest
1 tablespoon fresh dill, chopped
1 tablespoon fresh parsley, chopped
1/4 teaspoon salt
Instructions
1. In a bowl, combine ground turkey, breadcrumbs, egg, garlic, red onion, parsley, oregano, salt, and black pepper.
2. Mix gently until combined.
3. Shape mixture into evenly sized meatballs.
4. Heat olive oil in a skillet over medium heat.
5. Cook meatballs for 8 to 10 minutes, turning occasionally, until browned and cooked through.
6. In a saucepan, bring chicken broth to a boil.
7. Add rice, olive oil, and salt.
8. Reduce heat, cover, and simmer for 15 to 18 minutes until rice is tender.
9. Fluff rice with a fork.
10. Stir in lemon juice, lemon zest, dill, and parsley.
11. Serve meatballs over lemon herb rice.
Notes
Use ground chicken instead of turkey if preferred.
Do not overmix meatballs to keep them tender.
Add tzatziki sauce for extra Mediterranean flavor.
Serve with cucumber salad or roasted vegetables.
