This Greek slow cooker lemon chicken and potatoes is bright, tender, and full of Mediterranean flavor. Juicy chicken simmers with soft potatoes in a zesty lemon-garlic herb sauce—an easy slow cooker dinner perfect for busy nights.
Ingredients
2 pounds chicken thighs or breasts
3–4 cups baby potatoes, halved
1 small onion, sliced
4 cloves garlic, minced
1/3 cup fresh lemon juice
Zest of 1 lemon
1/4 cup olive oil
1/2 cup chicken broth
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh parsley, for serving
Optional toppings: olives or feta cheese
Instructions
1. Place potatoes and sliced onion at the bottom of the slow cooker.
2. Add chicken on top of the vegetables.
3. In a bowl, whisk lemon juice, lemon zest, olive oil, chicken broth, oregano, thyme, garlic powder, salt, and pepper.
4. Pour mixture evenly over the chicken.
5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
6. Taste and adjust seasoning with extra lemon or salt if needed.
7. Serve warm, topped with fresh parsley, olives, or crumbled feta.
Notes
Add rosemary for deeper Greek flavor.
Remove lid in the last 30 minutes to thicken the sauce.
Serve with rice, orzo, or a fresh Greek salad.
