This Gourmet Blueberry Grilled Cheese blends creamy brie, sharp white cheddar, and a quick lemony blueberry compote for a sweet-savory, crispy, golden sandwich that delivers cozy comfort in minutes.
Ingredients
4 slices sourdough or brioche bread
3 tablespoons unsalted butter, softened, divided
1 cup fresh blueberries (or frozen, thawed and well-drained)
1 tablespoon lemon juice
1 teaspoon lemon zest
1 to 2 tablespoons sugar or maple syrup, to taste
1 pinch fine sea salt
1/2 teaspoon cornstarch mixed with 1 teaspoon water (optional, for thickening)
4 ounces triple-cream brie, rind on, sliced
2 ounces sharp white cheddar, shredded
2 teaspoons fresh thyme leaves or torn basil
Freshly ground black pepper
Optional: 1 teaspoon honey or hot honey, for drizzling
Instructions
1. Make the blueberry compote: In a small skillet over medium heat, combine blueberries, lemon juice, lemon zest, sugar, and a pinch of salt. Cook 3 to 4 minutes, stirring, until the berries burst and juices thicken slightly.
2. If needed, stir in cornstarch slurry and cook 30 to 60 seconds more until glossy and jammy. Remove from heat and let cool 2 to 3 minutes so it’s thick, not runny.
3. Butter one side of each bread slice. Place two slices, buttered-side down, on a cutting board.
4. Layer cheese: Divide brie and white cheddar evenly over the two slices. Sprinkle with thyme or basil and a few cracks of black pepper.
5. Spoon a generous layer of blueberry compote over the cheese (avoid excess liquid). Drizzle with honey or hot honey if using.
6. Top with remaining bread, buttered-side up.
7. Cook: Heat a nonstick skillet or griddle over medium to medium-low. Place sandwiches in the pan and cook 3 to 4 minutes per side, pressing gently, until deeply golden and the cheese is melted.
8. Rest 1 minute on a board, then slice and serve hot while the edges are crisp and the center is melty.
Notes
For extra crunch, use day-old bread. If using frozen blueberries, thaw and drain well before cooking the compote.
