These fudgy cosmic brownie cookies are rich, chewy, and loaded with deep chocolate flavor—just like your favorite childhood treat, but better! Finished with a glossy chocolate ganache and rainbow candy-coated chips, they’re nostalgic, indulgent, and impossible to resist.
Ingredients
For the Cookies:
1/2 cup unsalted butter, melted
1 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 tsp vanilla extract
3/4 cup unsweetened cocoa powder
1 cup all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
For the Ganache:
1/2 cup semi-sweet chocolate chips
3 tbsp heavy cream
Topping:
Rainbow chocolate chips or sprinkles (cosmic-style!)
Instructions
1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
2. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
3. Add eggs and vanilla; mix until fully combined.
4. Sift in cocoa powder, flour, baking soda, and salt. Mix until a thick dough forms.
5. Scoop 2 tbsp-sized balls and place on baking sheets, spaced apart. Flatten slightly.
