Description
This Thai peanut chicken wrap is loaded with tender chicken, crisp veggies, and a creamy, tangy peanut sauce—all wrapped in a soft tortilla. It’s the perfect healthy, make-ahead lunch or light dinner with bold Thai-inspired flavors.
Ingredients
2 large flour tortillas or wraps
1 1/2 cups cooked shredded chicken (grilled or rotisserie)
1/2 cup shredded carrots
1/2 cup red bell pepper, thinly sliced
1/2 cup shredded cabbage or lettuce
2 tbsp chopped cilantro
1 tbsp chopped peanuts (optional)
1/4 avocado, sliced (optional)
For the Thai Peanut Sauce:
3 tbsp creamy peanut butter
1 tbsp soy sauce
1 tbsp lime juice
1 tbsp honey or maple syrup
1 tsp rice vinegar
1/2 tsp grated ginger
1–2 tbsp warm water (to thin)
Instructions
1. In a small bowl, whisk together all peanut sauce ingredients until smooth and creamy. Adjust thickness with warm water.
2. Lay tortillas flat. Spread 1–2 tablespoons of peanut sauce in the center of each wrap.
3. Layer with shredded chicken, carrots, bell pepper, cabbage, cilantro, and optional toppings.
4. Drizzle more peanut sauce over the top.
5. Fold in sides, then roll tightly into a wrap. Slice in half.
6. Serve immediately or wrap in foil for meal prep or lunchboxes.

• Make it vegetarian with tofu or chickpeas.
• Use pre-made slaw mix for faster assembly.
