Ingredients

8 ounces elbow macaroni (or pasta of choice)

2 tablespoons butter

1 large onion, thinly sliced

1 teaspoon brown sugar

1 tablespoon olive oil

1 pound boneless, skinless chicken breasts, cut into bite-size pieces

Salt and pepper, to taste

2 cloves garlic, minced

2 tablespoons flour

2 cups milk

1 cup chicken broth

1 teaspoon Dijon mustard

1 teaspoon Worcestershire sauce

1 1/2 cups shredded Gruyère cheese

1 cup shredded mozzarella cheese

1/2 cup shredded Parmesan cheese

Fresh thyme (optional, for garnish)


Instructions

1. Cook pasta according to package directions until just al dente. Drain and set aside.

2. In a large skillet, melt butter and olive oil over medium heat. Add sliced onions and brown sugar. Cook slowly for 15–20 minutes until deeply golden and caramelized. Remove from pan and set aside.

3. In the same pan, season chicken with salt and pepper and cook until browned and fully cooked. Add garlic and cook for 30 seconds more.

4. Sprinkle flour over chicken and stir for 1 minute. Gradually whisk in milk and chicken broth, stirring until sauce thickens (about 3–5 minutes).

5. Add Dijon mustard and Worcestershire sauce. Stir in caramelized onions and half of each cheese.

6. Add cooked pasta and mix until evenly coated.

7. Transfer to a greased baking dish, top with remaining cheese, and bake at 375°F (190°C) for 20 minutes or until bubbly and golden.

8. Garnish with fresh thyme before serving.


Notes

For extra richness, add 1/4 cup of cream to the sauce.
