Description

These Easy Ground Beef Enchiladas are loaded with seasoned beef, melted cheese, and flavorful enchilada sauce — a quick, satisfying dinner your whole family will love! Simple ingredients, big flavor, and ready in just 40 minutes.


Ingredients

**For the Filling**

1 lb lean ground beef

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or 2 tbsp homemade mix)

½ cup water

1 cup shredded cheddar or Mexican blend cheese

**For Assembly**

8 small flour or corn tortillas

2 cups red enchilada sauce (store-bought or homemade)

1 ½ cups shredded cheese (for topping)

2 tbsp chopped cilantro (for garnish)

**Optional Toppings**

Sour cream

Diced tomatoes

Sliced jalapeños

Avocado or guacamole


Instructions

1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

2. In a large skillet, cook ground beef and onion over medium heat until browned. Drain any excess fat.

3. Add garlic, taco seasoning, and water. Simmer 3–4 minutes until thickened. Stir in ½ cup cheese, then remove from heat.

4. Warm tortillas in the microwave for 20–30 seconds to make them pliable.

5. Spread ¼ cup enchilada sauce on the bottom of the baking dish.

6. Spoon about ¼ cup of the beef mixture into each tortilla, roll it up, and place seam-side down in the dish.

7. Pour remaining enchilada sauce evenly over the top and sprinkle with shredded cheese.

8. Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly.

9. Garnish with cilantro and your favorite toppings. Serve hot and enjoy!


Notes

Use corn tortillas for a more authentic flavor, or flour for a softer texture.

Add black beans or corn to the filling for extra heartiness.
