Ingredients
For the cookie dough:
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1½ cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
For the cinnamon swirl:
1/4 cup brown sugar
1½ tsp ground cinnamon
2 tbsp melted butter
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a bowl, cream butter and granulated sugar until light and fluffy.
3. Beat in egg and vanilla extract.
4. Whisk flour, baking powder, and salt, then mix into the wet ingredients until dough forms.
5. In a small bowl, mix brown sugar, cinnamon, and melted butter.
6. Roll dough into balls and flatten slightly.
7. Spoon a small amount of cinnamon mixture on top and swirl gently with a toothpick.
8. Place cookies 2 inches apart on baking sheets.
9. Bake for 10–12 minutes until edges are set and centers are soft.
10. Cool on the pan for 5 minutes, then transfer to a wire rack.
Notes
• Don’t overbake—cookies firm up as they cool.
• Chill dough 15 minutes for thicker cookies.
• Delicious with a simple vanilla glaze.
