This Dump-and-Bake Chicken Tzatziki Casserole is a creamy, fresh, and effortless Greek-inspired dinner. Juicy chicken bakes in a tangy tzatziki-style sauce with rice, creating a one-dish meal that’s healthy, flavorful, and perfect for busy nights.
Ingredients
For the Casserole:
2 cups uncooked rice
2 cups chicken broth
400g chicken breast, diced
1 cucumber, grated and squeezed dry
1 cup Greek yogurt
2 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon dried oregano
Salt and black pepper to taste
Optional:
1/2 cup crumbled feta cheese
Fresh dill or parsley for garnish
Instructions
1. Preheat oven to 180°C (350°F).
2. In a large baking dish, combine uncooked rice and chicken broth.
3. Add diced chicken evenly over the rice.
4. In a bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, oregano, salt, and pepper.
5. Spread the tzatziki mixture over the chicken and rice.
6. Cover tightly with foil.
7. Bake for 40–45 minutes until rice is tender and chicken is cooked through.
8. Remove foil, sprinkle with feta if using, and bake uncovered for 5–10 more minutes.
9. Garnish with fresh dill or parsley and serve.
Notes
Squeeze cucumber well to avoid excess water.
Use pre-cooked rice to reduce baking time.
Add cherry tomatoes for extra freshness.
Store leftovers in the fridge for up to 3 days.
