Delicious Vanilla Berry Cheesecake is ultra-creamy with rich vanilla flavor and a vibrant berry topping. A buttery cookie crust supports a smooth cheesecake base, finished with sweet-tart berries for a perfectly balanced, show-stopping dessert.
Ingredients
For the crust:
2 cups graham cracker crumbs
1/2 cup melted butter
2 tbsp sugar
For the vanilla cheesecake filling:
24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
1 cup sour cream
1 tbsp vanilla extract
1 tbsp lemon juice
For the berry topping:
2 cups mixed berries (strawberries, blueberries, raspberries)
1/3 cup sugar
1 tbsp lemon juice
1 tsp cornstarch mixed with 1 tbsp water
Instructions
1. Preheat oven to 325°F (165°C). Grease a springform pan and wrap the outside with foil.
2. Mix graham cracker crumbs, melted butter, and sugar; press firmly into the pan.
3. Bake crust for 10 minutes, then cool slightly.
4. Beat cream cheese and sugar until smooth and creamy.
5. Add eggs one at a time on low speed.
6. Mix in sour cream, vanilla extract, and lemon juice.
7. Pour filling over crust and smooth the top.
8. Place pan in a water bath and bake for 65–75 minutes until center is just set.
9. Turn off oven, crack the door, and let cool for 1 hour.
10. Refrigerate at least 4 hours or overnight.
11. Simmer berries with sugar and lemon juice until bubbly.
12. Stir in cornstarch slurry and cook until thickened; cool completely.
13. Spoon berry topping over chilled cheesecake before serving.
