Description

Crockpot Teriyaki Chicken is tender, flavorful, and simmered in a sweet-savory teriyaki sauce. A family-friendly dinner that’s simple, comforting, and perfect for busy nights.


Ingredients

2 lbs boneless skinless chicken thighs (or breasts)

1/2 cup low-sodium soy sauce

1/3 cup honey

1/4 cup brown sugar

3 tbsp rice vinegar

3 garlic cloves, minced

1 tbsp fresh ginger, grated

1/4 cup onion, finely diced

2 tbsp cornstarch

2 tbsp water

Sesame seeds and sliced green onions, for garnish

Cooked rice, for serving


Instructions

1. Place chicken in the slow cooker.

2. In a bowl, whisk soy sauce, honey, brown sugar, rice vinegar, garlic, ginger, and onion.

3. Pour sauce over chicken, cover, and cook on LOW 4–5 hours or HIGH 2–3 hours.

4. Remove chicken, shred or slice, and set aside.

5. In a small bowl, whisk cornstarch with water, stir into sauce in slow cooker.

6. Cook on HIGH for 10 minutes until thickened.

7. Return chicken to sauce, toss to coat.

8. Serve hot over rice, garnished with sesame seeds and green onions.


Notes

Use chicken thighs for the juiciest result.

Double the sauce if you like extra for rice or veggies.

Great for meal prep—store leftovers in fridge up to 4 days.
