4 boneless, skinless chicken breasts (or thighs)
½ cup Dijon mustard
¼ cup honey
2 tbsp yellow mustard (optional for extra tang)
¼ cup mayonnaise (optional for creaminess)
3 cloves garlic, minced
½ tsp paprika
Salt & black pepper, to taste
2 tbsp olive oil or butter

Instructions
1. Lightly grease your slow cooker with nonstick spray or a touch of oil.
2. In a medium bowl, whisk together Dijon mustard, honey, yellow mustard, mayonnaise, garlic, paprika, salt, and pepper until smooth.
3. Place chicken in the slow cooker and pour the sauce over the top, turning each piece to coat evenly.
4. Cover and cook on LOW for 5–6 hours or on HIGH for 2½–3 hours, until chicken is tender and cooked through (165°F internal temperature).
5. Once cooked, remove chicken and whisk the sauce in the slow cooker. If you prefer a thicker sauce, stir in 1 tsp cornstarch mixed with 1 tbsp water and cook for another 10 minutes on HIGH.
6. Return chicken to the sauce and coat well.
7. Serve warm, topped with parsley, over mashed potatoes, rice, or veggies — every bite is pure sweet and tangy perfection!

Use boneless chicken thighs for extra tenderness.
