Description
Crockpot French onion meatloaf with melted Swiss cheese is an easy slow cooker recipe packed with savory beef, caramelized onion flavor, and rich, cheesy goodness.
Ingredients
2 lbs ground beef
1 packet French onion soup mix
1/2 cup breadcrumbs
2 large eggs
1/3 cup milk
1 small onion, finely diced
2 cloves garlic, minced
1 tbsp Worcestershire sauce
1/2 tsp black pepper
For Topping:
1 cup shredded Swiss cheese
1/2 cup caramelized onions (optional but recommended)
Optional Gravy:
1 cup beef broth
1 tbsp cornstarch
1 tbsp water
Instructions
1. In a large bowl, combine ground beef, French onion soup mix, breadcrumbs, eggs, milk, diced onion, garlic, Worcestershire sauce, and black pepper.
2. Mix gently until just combined.
3. Shape mixture into a loaf and place into the crockpot.
4. Cover and cook on low for 6–7 hours or high for 3–4 hours until fully cooked.
5. About 20 minutes before serving, sprinkle Swiss cheese over the top.
6. Add caramelized onions if using and cover until cheese melts.
7. Optional: remove juices from crockpot, simmer with beef broth, and thicken with cornstarch slurry to make gravy.
8. Let meatloaf rest for 10 minutes before slicing.
9. Serve warm with gravy if desired.
Notes
Do not overmix the meat to keep the meatloaf tender.
Use a liner or foil sling for easier removal.
You can substitute ground turkey for a lighter version.
Serve with mashed potatoes or green beans for a complete meal.
Store leftovers in the refrigerator for up to 4 days.
