Description

Crockpot Cottage Cheese Tikka Masala is a creamy, protein-rich twist on the classic Indian favorite. Cubes of cottage cheese simmer slowly in a spiced tomato masala sauce, soaking up warm, aromatic flavors for an easy, comforting slow cooker meal.


Ingredients

2 cups cottage cheese, cubed

1 tbsp olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tbsp garam masala

1 tsp ground cumin

1 tsp paprika

1/2 tsp turmeric

1 can (400 g) crushed tomatoes

1/2 cup heavy cream or coconut milk

1/2 cup vegetable broth

Salt, to taste

Optional for serving:

Cooked basmati rice

Fresh cilantro


Instructions

1. Add onion, garlic, ginger, spices, crushed tomatoes, broth, and olive oil to the crockpot.

2. Stir well to combine.

3. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours.

4. Stir in cottage cheese cubes and cream or coconut milk.

5. Cover and cook an additional 20–30 minutes until heated through.

6. Taste and adjust salt as needed.

7. Serve warm over rice and garnish with cilantro if desired.


Notes

• Blend sauce before adding cottage cheese for extra creaminess.

• Add chickpeas or spinach for more texture.
