This Crockpot Churro Chex Mix is the cozy, cinnamon-sugar snack that disappears fast. Tossed in a buttery vanilla coating and slow-cooked to crispy, golden goodness, it’s sweet, addictive, and perfect for parties, road trips, or just couch-snacking in sweats.
Ingredients
6 cups Rice Chex cereal
1/2 cup unsalted butter, melted
1/2 cup brown sugar
1/4 cup granulated sugar
2 tsp cinnamon
1 tsp vanilla extract
Optional: pinch of salt, mini marshmallows, or white chocolate chips
Instructions
1. Spray the inside of your slow cooker with non-stick spray or use a liner.
2. Add Chex cereal to the crockpot.
3. In a bowl, whisk together melted butter, brown sugar, granulated sugar, cinnamon, and vanilla.
4. Pour the cinnamon-sugar mixture over the cereal and toss gently to coat.
5. Cover and cook on LOW for 1.5 to 2 hours, stirring every 30 minutes to prevent burning.
6. Once cereal is crisp and coated, spread out on a parchment-lined baking sheet to cool.
7. Add optional mix-ins like mini marshmallows or white chocolate chips once cooled.
8. Store in an airtight container for up to 5 days.
Notes
Stir every 30 minutes to avoid burning the sugar.
Let it cool completely before storing so it stays crunchy.
For extra crunch, bake it at 250°F for 15 minutes after slow cooking.
