Description

This easy crockpot black eyed peas and collard greens recipe is the ultimate Southern comfort food. Slow cooked with garlic, onion, and smoked meat, it’s rich in flavor and tradition—especially on New Year’s Day.


Ingredients

1 lb dried black eyed peas, rinsed

1 bunch collard greens, stemmed and chopped

1 medium onion, chopped

3 cloves garlic, minced

1 smoked ham hock (or 1 cup diced smoked turkey or bacon)

6 cups low-sodium chicken broth

1 tsp salt

1/2 tsp black pepper

1/2 tsp crushed red pepper flakes (optional)

1 tbsp apple cider vinegar (for finish)


Instructions

1. Place rinsed black eyed peas in the bottom of a large slow cooker.

2. Add chopped onion, garlic, and smoked meat of choice.

3. Pour in chicken broth, then add salt, pepper, and red pepper flakes.

4. Top with chopped collard greens. Don’t stir—they will cook down.

5. Cover and cook on LOW for 7–8 hours or until peas are tender and flavors meld.

6. Remove ham hock, shred any meat and return to pot.

7. Stir in apple cider vinegar just before serving for brightness.

8. Taste and adjust seasoning. Serve warm.


Notes

No need to soak black eyed peas first—they cook beautifully in the slow cooker.

Use vegetable broth for a vegetarian version (omit meat).

Great served with cornbread or over rice.
