Description

These Crispy Zucchini Rings are golden, crunchy, and perfectly seasoned, making them an irresistible snack or appetizer. Served with a creamy dip, they’re easy to make and a delicious way to enjoy zucchini with a satisfying crispy coating.


Ingredients

For the Zucchini Rings:

2 medium zucchinis, sliced into rounds

1/2 cup all-purpose flour

2 eggs, beaten

1 cup breadcrumbs (panko preferred)

1/2 cup grated parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Olive oil spray

For the Creamy Dip:

1/2 cup sour cream or Greek yogurt

2 tablespoons mayonnaise

1 teaspoon lemon juice

1/2 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon fresh herbs (optional)


Instructions

1. Preheat oven to 425°F (220°C) or air fryer to 400°F (200°C).

2. Slice zucchinis into even rounds.

3. Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs, parmesan, and spices.

4. Dip each zucchini slice into flour, then egg, then coat with breadcrumb mixture.

5. Place coated zucchini rings on a parchment-lined baking sheet or air fryer basket.

6. Lightly spray with olive oil.

7. Bake for 18–20 minutes or air fry for 10–12 minutes until golden and crispy.

8. Meanwhile, mix all dip ingredients in a bowl until smooth.
