Description

This creamy Tuscan sausage pasta with spinach and sun-dried tomatoes is rich, indulgent, and comforting — the perfect weeknight dinner! Savory Italian sausage, velvety cream sauce, spinach, and tangy sun-dried tomatoes come together for a restaurant-style meal that’s incredibly easy to make.


Ingredients

12 oz pasta (penne, rigatoni, or rotini)

1 lb Italian sausage (mild or spicy)

3 cloves garlic, minced

1 small onion, finely diced

½ cup sun-dried tomatoes, chopped (oil-packed)

2 cups baby spinach

1½ cups heavy cream

1 cup chicken broth

½ cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper, to taste

Olive oil for cooking


Instructions

1. Cook pasta in salted boiling water according to package directions. Drain and set aside.

2. Meanwhile, heat a little olive oil in a large skillet. Add sausage and cook until browned, breaking it apart.

3. Add diced onion and garlic, cooking 2–3 minutes until softened and fragrant.

4. Stir in sun-dried tomatoes and Italian seasoning.

5. Pour in chicken broth and heavy cream, stirring to combine. Simmer 4–6 minutes until thickened slightly.

6. Add Parmesan and spinach, stirring until cheese melts and spinach wilts.

7. Add cooked pasta to the sauce and toss to coat evenly.

8. Season with salt and pepper to taste. Serve hot with extra Parmesan.


Notes

Use gluten-free pasta if desired — sauce is naturally GF.

Add red pepper flakes for heat or swap sausage for grilled chicken.

If sauce thickens too much, splash in extra broth or pasta water.

Leftovers are AMAZING and reheat perfectly the next day.
