Ingredients
4 large bell peppers (any color), halved and seeded
1 pound ground turkey or beef
1 tablespoon olive oil
1/2 cup diced onion
2 cloves garlic, minced
1 cup marinara or pizza sauce
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes (optional)
1/4 cup cream cheese, softened
1 cup shredded mozzarella cheese, divided
1/4 cup grated Parmesan cheese
12 pepperoni slices (optional)
Salt and black pepper, to taste
Fresh basil, for garnish
Instructions
1. Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
2. Heat olive oil in a skillet over medium heat. Add onion and cook for 2 minutes until soft. Add garlic and cook for 30 seconds more.
3. Add ground turkey or beef and cook until browned, about 5–6 minutes. Drain any excess fat.
4. Stir in marinara sauce, Italian seasoning, red pepper flakes, and cream cheese. Mix until creamy and well blended.
5. Add half of the mozzarella and all of the Parmesan cheese. Stir until melted and combined.
6. Arrange bell pepper halves in the baking dish and season with salt and pepper.
7. Spoon filling evenly into each pepper half. Top with remaining mozzarella and pepperoni slices.
8. Cover with foil and bake for 25 minutes. Remove foil and bake another 10 minutes until cheese is bubbly and golden.
9. Garnish with fresh basil before serving.
Notes
Use chicken or plant-based ground meat for a lighter option.
For extra flavor, drizzle with balsamic glaze or a sprinkle of chili flakes before serving.
You can assemble the peppers ahead of time and refrigerate for up to 24 hours before baking.
