This creamy pepperoncini chicken skillet is tangy, rich, and packed with flavor! Juicy chicken simmers in a creamy sauce with pepperoncini peppers, garlic, and herbs for an easy one-pan dinner that’s bold, comforting, and weeknight-friendly.
Ingredients
1½ lbs chicken breasts or thighs
2 tbsp olive oil
1 small onion, finely diced
3 cloves garlic, minced
½ cup sliced pepperoncini peppers
¼ cup pepperoncini juice
1 cup chicken broth
¾ cup heavy cream
½ tsp dried oregano
½ tsp dried thyme
Salt and black pepper, to taste
½ cup grated Parmesan cheese
Fresh parsley for serving
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Season chicken with salt and pepper and sear 4–5 minutes per side until golden. Remove and set aside.
3. In the same skillet, add onion and cook 2–3 minutes until softened.
4. Stir in garlic and cook 30 seconds until fragrant.
5. Add pepperoncini peppers, pepperoncini juice, chicken broth, oregano, and thyme. Stir well.
6. Return chicken to the skillet, cover, and simmer 10–12 minutes until chicken is cooked through.
7. Reduce heat to low and stir in heavy cream and Parmesan until creamy.
8. Taste and adjust seasoning.
9. Garnish with parsley and serve warm.
Notes
Serve over rice, mashed potatoes, or pasta to soak up the sauce.
Use chicken thighs for extra juiciness.
Add spinach during the last few minutes for extra greens.
Leftovers reheat beautifully.
