Ingredients
For the mashed potatoes:
4 large potatoes, peeled and cubed
1/2 cup milk
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon black pepper
For the shrimp:
1 lb shrimp, peeled and deveined
2 tablespoons butter
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated parmesan cheese
1 tablespoon lemon juice
2 tablespoons chopped parsley
Instructions
1. Boil potatoes in salted water for about 15 minutes until tender.
2. Drain and mash with milk, butter, salt and black pepper until smooth.
3. Set aside and keep warm.
4. In a skillet melt butter over medium heat.
5. Add garlic and cook for about 30 seconds until fragrant.
6. Add shrimp and cook for 2β3 minutes per side until pink and cooked through.
7. Remove shrimp and set aside.
8. In the same skillet pour in chicken broth and heavy cream.
9. Stir and bring to a gentle simmer.
10. Add paprika, salt and black pepper.
11. Stir in parmesan cheese and cook until the sauce thickens slightly.
12. Return shrimp to the skillet and toss to coat in the sauce.
13. Add lemon juice and stir well.
14. Serve creamy garlic shrimp over mashed potatoes and garnish with parsley.
Notes
Use fresh shrimp for best flavor.
Yukon gold potatoes make extra creamy mashed potatoes.
Add spinach or mushrooms to the sauce for variation.
Serve immediately while warm and creamy.
