Ingredients
1 lb shrimp, peeled and deveined
2 tbsp olive oil
Salt and black pepper, to taste
3 cloves garlic, minced
1 cup orzo pasta
2 1/2 cups chicken broth
1/2 cup heavy cream
1/3 cup sun-dried tomatoes, chopped
2 cups fresh spinach
1/4 cup grated parmesan cheese
1/2 tsp Italian seasoning
Optional garnish:
Fresh basil
Extra parmesan
Instructions
1. Season shrimp with salt and black pepper.
2. Heat 1 tbsp olive oil in a large skillet over medium-high heat.
3. Add shrimp and cook 1–2 minutes per side until pink. Remove and set aside.
4. Add remaining olive oil and garlic to the skillet and sauté until fragrant.
5. Stir in orzo and toast for 1 minute.
6. Pour in chicken broth and bring to a gentle simmer.
7. Cook, stirring occasionally, for 8–10 minutes until orzo is tender.
8. Stir in heavy cream, sun-dried tomatoes, Italian seasoning, and parmesan.
9. Add spinach and let it wilt.
10. Return shrimp to the skillet and simmer 2 minutes until warmed through.
11. Taste and adjust seasoning, then serve warm.
Notes
• Use half-and-half for a lighter version.
• Swap shrimp for chicken if desired.
