Ingredients
1 1/2 cups uncooked orzo
1 cup cottage cheese
1 head garlic
2 tbsp olive oil
2 cups vegetable or chicken broth
1/2 cup milk
1/2 cup grated parmesan cheese
Salt and black pepper, to taste
1/2 tsp Italian seasoning

Spinach
Cherry tomatoes
Instructions
1. Preheat oven to 200°C (400°F).
2. Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft.
3. Cook orzo in broth until just tender and liquid is mostly absorbed.
4. Blend cottage cheese until smooth and creamy.
5. Squeeze roasted garlic cloves into the cottage cheese and mix well.
6. Stir cottage cheese mixture, milk, seasoning, salt, and pepper into the orzo.
7. Transfer to a greased baking dish and sprinkle parmesan on top.
8. Bake uncovered for 20–25 minutes until bubbly and lightly golden.
9. Rest 5 minutes before serving.
