Ingredients
1 cup couscous
1 cup chicken or vegetable broth
1 lb shrimp, peeled and deveined
2 tablespoons olive oil
2 cloves garlic, minced
1/2 cup cherry tomatoes, halved
1/4 cup cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup feta cheese, crumbled
2 tablespoons fresh parsley, chopped
1 tablespoon lemon juice
1 teaspoon lemon zest
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Bring broth to a boil, then remove from heat and stir in couscous. Cover and let sit for 5 minutes, then fluff with a fork.
2. Heat olive oil in a skillet over medium heat.
3. Add garlic and sauté for 30 seconds until fragrant.
4. Add shrimp, paprika, salt, and pepper. Cook for 2–3 minutes per side until pink and cooked through.
5. In a large bowl, combine cooked couscous, cherry tomatoes, cucumber, and red onion.
6. Add cooked shrimp to the bowl.
7. Drizzle with lemon juice and sprinkle with lemon zest.
