These Coffee Dipping Cookies are crisp, golden, and just sweet enough. Designed to hold up to a hot cup of coffee or tea without crumbling, they’re the ultimate cozy treat for any time of day.
Ingredients
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
Instructions
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
3. Add egg and vanilla extract. Beat until combined.
4. In another bowl, whisk flour, baking powder, cinnamon, and salt.
5. Gradually add dry ingredients to wet, mixing until dough forms.
6. Shape dough into a log and slice into sticks about 3 inches long and 1/2 inch wide.
7. Place on baking sheet, spaced slightly apart.
8. Bake for 12–15 minutes or until edges are golden. Cool completely on wire rack.
Notes
Dip ends in melted chocolate and sprinkle with espresso powder for extra flair.
Cookies stay fresh in an airtight container for up to 1 week.
