Ingredients
1 pound ground beef
3 medium potatoes, diced
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
1 teaspoon paprika
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup beef broth
1/2 cup shredded cheddar cheese
2 tablespoons chopped parsley
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add diced potatoes and cook for 10 to 12 minutes, stirring occasionally, until tender and lightly browned.
3. Remove potatoes from skillet and set aside.
4. In the same skillet, add ground beef and cook until browned, breaking it apart.
5. Add diced onion and cook until softened.
6. Stir in garlic, paprika, thyme, salt, and black pepper.
7. Return potatoes to the skillet.
8. Pour in beef broth and stir to combine.
9. Cook for 5 to 7 minutes until everything is heated through and flavors blend.
10. Sprinkle shredded cheddar cheese over the top.
11. Cover and cook until cheese melts.
12. Garnish with parsley and serve warm.
