Description

Classic Ginger Garlic Chicken Noodle Soup is light, nourishing, and deeply comforting. Tender chicken, soft noodles, and a fragrant broth infused with fresh ginger and garlic make this easy homemade soup perfect for cozy evenings or whenever you need a soothing meal.


Ingredients

1 tbsp olive oil

1 small onion, diced

4 cloves garlic, minced

1 tbsp fresh ginger, grated

1 lb boneless skinless chicken breasts or thighs

1 tsp salt

1/2 tsp black pepper

6 cups chicken broth

2 carrots, sliced

2 celery stalks, sliced

6 oz egg noodles or rice noodles

Optional add-ins:

Soy sauce or fish sauce

Fresh parsley or cilantro

Lemon wedges


Instructions

1. Heat olive oil in a large pot over medium heat.

2. Add onion and sauté until softened.

3. Stir in garlic and ginger and cook until fragrant.

4. Add chicken, salt, and black pepper. Cook for 3–4 minutes to lightly sear.

5. Pour in chicken broth and bring to a gentle boil.

6. Add carrots and celery and simmer for 15 minutes until chicken is cooked through.

7. Remove chicken, shred it, and return it to the pot.

8. Add noodles and cook according to package directions until tender.

9. Taste and adjust seasoning.

10. Serve hot with herbs or a squeeze of lemon if desired.
