Description

This Classic Creamy Tomato Basil Soup is smooth, rich, and full of cozy tomato flavor with fresh basil and a splash of cream. Perfect with a grilled cheese or as a standalone comfort dish!


Ingredients

2 tbsp olive oil

1 small onion, diced

3 cloves garlic, minced

1 (28 oz) can whole peeled tomatoes

1 cup vegetable or chicken broth

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp sugar (optional, to balance acidity)

1/2 cup heavy cream (or coconut cream for dairy-free)

1/4 cup chopped fresh basil (plus more for garnish)

Optional: grated Parmesan for topping


Instructions

1. Heat olive oil in a large saucepan over medium heat. Add onion and cook for 4–5 minutes until softened.

2. Add garlic and sauté for 1 minute until fragrant.

3. Add canned tomatoes (with juice), broth, salt, pepper, and sugar if using. Bring to a simmer.

4. Simmer uncovered for 15–20 minutes, breaking up tomatoes with a spoon.

5. Remove from heat and blend until smooth using an immersion blender or countertop blender.

6. Return soup to low heat. Stir in heavy cream and fresh basil.

7. Simmer for another 5 minutes to blend flavors.

8. Taste and adjust seasoning. Serve hot with fresh basil and optional Parmesan.


Notes

Use fire-roasted tomatoes for a smoky flavor twist.

Double the batch and freeze leftovers for up to 2 months.
