Ingredients
8 slices soft sandwich bread
4 ounces cream cheese, softened
2 tablespoons powdered sugar
1 teaspoon vanilla extract
2 tablespoons brown sugar
1 teaspoon ground cinnamon
2 large eggs
1/4 cup milk
1 tablespoon butter
1/4 cup granulated sugar
1 teaspoon ground cinnamon for coating
Maple syrup for serving
Instructions
1. Trim crusts from the bread slices and flatten each slice with a rolling pin.
2. In a bowl, mix cream cheese, powdered sugar, vanilla extract, brown sugar, and cinnamon until smooth.
3. Spread a thin layer of the cinnamon cream filling onto each bread slice.
4. Roll each slice tightly into a log shape.
5. In a shallow bowl, whisk eggs and milk together.
6. Heat butter in a large skillet over medium heat.
7. Dip each roll-up into the egg mixture until lightly coated.
8. Place roll-ups seam-side down into the skillet.
9. Cook for 2 to 3 minutes per side until golden brown on all sides.
10. In a small bowl, combine granulated sugar and cinnamon.
11. Roll warm French toast roll-ups in the cinnamon sugar mixture.
12. Serve warm with maple syrup.
Notes
Use soft white bread for the easiest rolling.
Do not soak the roll-ups too long in the egg mixture or they may fall apart.
Add Nutella or fruit jam for fun flavor variations.
Store leftovers in the refrigerator for up to 2 days and reheat before serving.
