These cinnamon roll cookies combine everything you love about classic cinnamon rolls and soft sugar cookies in one irresistible bite. Buttery, chewy, and swirled with cinnamon-sugar filling, they’re finished with a drizzle of sweet glaze. Perfect for holiday cookie trays or cozy baking days.
Ingredients
For the Cookie Dough:
1 cup unsalted butter, softened
3/4 cup granulated sugar
1/2 cup brown sugar
2 large eggs
2 tsp vanilla extract
2 3/4 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
For the Filling:
1/4 cup unsalted butter, melted
1/3 cup brown sugar
1 tbsp ground cinnamon
For the Glaze:
1 cup powdered sugar
1–2 tbsp milk
1/2 tsp vanilla extract
Instructions
1. In a large bowl, cream together butter and both sugars until fluffy.
2. Beat in eggs and vanilla until well combined.
3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix into wet ingredients.
4. Divide dough in half. Roll each portion into a rectangle (about 1/4 inch thick) between parchment paper.
5. Brush with melted butter and sprinkle with cinnamon sugar filling.
6. Roll tightly into a log using the parchment. Chill for at least 1 hour.
7. Preheat oven to 350°F (175°C). Slice chilled logs into 1/2-inch thick cookies.
8. Place on lined baking sheet and bake 10–12 minutes until edges are set.
9. Cool completely. Mix glaze ingredients and drizzle over cooled cookies.
