Ingredients
1 pound flank steak or sirloin steak
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups cooked rice
1 cup black beans, drained and rinsed
1 cup corn
1 avocado, sliced
1 cup cherry tomatoes, halved
1/4 cup red onion, diced
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
1 tablespoon honey
1 tablespoon olive oil
Instructions
1. Season steak with chili powder, cumin, garlic powder, salt, and black pepper.
2. Heat olive oil in a skillet or grill pan over medium-high heat.
3. Cook steak for 4 to 5 minutes per side, or until desired doneness.
4. Remove steak from heat and let it rest for 5 minutes.
5. Slice steak thinly against the grain.
6. In a small bowl, whisk lime juice, honey, olive oil, and chopped cilantro.
7. Divide cooked rice among bowls.
8. Top with black beans, corn, avocado, cherry tomatoes, red onion, and sliced steak.
9. Drizzle cilantro lime dressing over each bowl.
10. Serve immediately.
