Ingredients
1 1/2 pounds boneless, skinless chicken breasts (cut into strips)
2 tablespoons olive oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 medium onion, sliced
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup sour cream (for topping)
2 tablespoons chopped cilantro (for garnish)
Instructions
1. Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
2. In a large skillet, heat olive oil over medium heat. Add chicken strips and cook until lightly browned, about 5 minutes.
3. Add bell peppers and onions. Sauté for 5–6 minutes until slightly softened.
4. Stir in chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well.
5. Transfer mixture to the prepared baking dish. Sprinkle cheddar and Monterey Jack cheese evenly on top.
6. Bake uncovered for 15–20 minutes, until cheese is melted and bubbly.
7. Top with sour cream and chopped cilantro before serving. Serve with rice, tortillas, or cauliflower rice for a complete meal.
