Description

This Authentic Zuppa Toscana recipe is a rich, creamy Italian soup loaded with spicy sausage, tender potatoes, fresh kale, and crispy bacon. It’s the perfect comfort food for cozy nights or family dinners!


Ingredients

1 lb Italian sausage (spicy or mild)

4 slices bacon, chopped

1 small onion, diced

3 cloves garlic, minced

4 cups chicken broth

3 cups russet potatoes, sliced into thin half moons

1 cup heavy cream

2 cups chopped kale (or spinach)

Salt and pepper to taste

Crushed red pepper flakes (optional)

Parmesan cheese, for serving


Instructions

1. In a large pot or Dutch oven, cook bacon over medium heat until crispy. Remove with a slotted spoon and set aside.

2. Add sausage to the pot and cook until browned, breaking it up with a spoon. Drain excess grease if needed.

3. Add onion and sauté 3–4 minutes, then add garlic and cook 1 more minute.

4. Pour in chicken broth and add sliced potatoes. Bring to a simmer and cook 10–15 minutes until potatoes are fork-tender.

5. Reduce heat to low. Stir in heavy cream and chopped kale. Simmer 5 more minutes until kale is wilted.

6. Season with salt, pepper, and optional red pepper flakes to taste.

7. Top with crispy bacon and grated Parmesan before serving.


Notes

You can substitute kale with spinach or Swiss chard.

Use half-and-half instead of cream for a lighter version.

To make it dairy-free, use coconut cream and skip the Parmesan.
