Description

This Cheesy Slow Cooker Big Mac Dip tastes like a melty cheeseburger with tangy special sauce, crunchy pickles, and a creamy, crowd-pleasing finish—perfect for game day and parties.


Ingredients

1 lb (450 g) ground beef, 85% lean

1/2 tsp kosher salt

1/2 tsp black pepper

1 tsp onion powder

1 tsp garlic powder

1/2 tsp smoked paprika

1 small yellow onion, finely diced

1 tbsp Worcestershire sauce

8 oz (225 g) cream cheese, cubed

1 cup shredded sharp cheddar cheese

6 slices American cheese, chopped

3/4 cup evaporated milk (or half-and-half)

1/2 cup mayonnaise

3 tbsp ketchup

2 tbsp yellow mustard

3 tbsp dill pickle relish

1 tsp white vinegar

1 tsp granulated sugar

1/2 tsp paprika

1/2 cup finely diced dill pickles (for topping)

1/2 cup shredded iceberg lettuce (for topping)

2 tbsp sesame seeds (optional garnish)

2 green onions, thinly sliced (optional)

Dippers: toasted sesame bun crostini, waffle fries, pretzel bites, tortilla chips, or veggies


Instructions

1. In a skillet over medium-high heat, cook ground beef and diced onion until beef is browned and onions are tender, 5–7 minutes. Drain excess fat. Season with salt, pepper, onion powder, garlic powder, and smoked paprika. Stir in Worcestershire sauce.

2. Add the seasoned beef mixture to a slow cooker. Stir in cream cheese, cheddar, American cheese, and evaporated milk.

3. Cover and cook on LOW for 2 hours (or HIGH for 1 hour), stirring every 30 minutes until smooth and creamy.

4. In a small bowl, whisk together mayonnaise, ketchup, mustard, dill pickle relish, vinegar, sugar, and paprika.

5. Stir half of the special sauce into the dip. Taste and adjust seasoning. Keep the rest for drizzling.

6. Switch to WARM. Top the dip with diced pickles, shredded lettuce, sesame seeds, and green onions. Drizzle with remaining sauce. Serve with sesame bun crostini, waffle fries, chips, or veggies.

7. Brown beef and prep sauce up to 2 days ahead; refrigerate. On party day, cook in the slow cooker and garnish before serving.
