Cheesy Shrimp Scampi Pasta Bake is buttery, garlicky, and irresistibly creamy. Juicy shrimp are tossed with pasta in a lemony scampi sauce, finished with melty cheese, and baked until bubbly for an easy, comforting dinner everyone loves.
Ingredients
12 oz pasta (penne or rotini)
1 lb large shrimp, peeled and deveined
3 tbsp butter
2 tbsp olive oil
5 cloves garlic, minced
1/2 tsp red pepper flakes (optional)
Zest and juice of 1 lemon
1/2 cup chicken broth
1/2 cup heavy cream
Salt and black pepper, to taste
1½ cups shredded mozzarella cheese
1/4 cup grated parmesan cheese
Optional add-ins:
Fresh parsley
Baby spinach
Breadcrumbs for topping
Instructions
1. Preheat oven to 375°F (190°C) and grease a baking dish.
2. Cook pasta according to package directions; drain and set aside.
3. In a large skillet, melt butter with olive oil over medium heat.
4. Add garlic and red pepper flakes; sauté until fragrant.
5. Add shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink. Remove shrimp and set aside.
6. Stir lemon zest, lemon juice, chicken broth, and heavy cream into the skillet; simmer 3–4 minutes.
7. Add cooked pasta and shrimp back to the sauce and toss to coat.
8. Transfer mixture to the baking dish.
9. Top with mozzarella and parmesan cheese.
10. Bake uncovered for 20–25 minutes until bubbly and lightly golden.
11. Optional: Broil 1–2 minutes for extra browning.
12. Garnish with parsley and serve hot.
