Description
This cheesy scalloped potatoes and beef bake is the ultimate comfort food dinner. Tender layers of thinly sliced potatoes, seasoned ground beef, creamy sauce, and melted cheese come together into a hearty, satisfying casserole that’s perfect for family meals or potlucks!
Ingredients
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
2 tbsp butter
2 tbsp all-purpose or gluten-free flour
2 cups milk
1 tsp paprika
½ tsp dried thyme or Italian seasoning
Salt and pepper, to taste
4 cups thinly sliced potatoes (russet or Yukon gold)
2 cups shredded cheddar or Colby Jack cheese
Fresh parsley, for garnish
Instructions
1. Preheat oven to 375°F (190°C). Grease a 9×13 baking dish.
2. In a skillet, brown ground beef with diced onion and garlic. Season with salt, pepper, paprika, and thyme. Drain excess fat if needed.
3. In a saucepan, melt butter, whisk in flour, and cook 1 minute. Slowly whisk in milk until smooth and thickened. Season with salt and pepper.
4. Layer half of the potatoes in the baking dish. Spread half of the beef mixture over the potatoes. Pour a little sauce over the top and sprinkle with cheese.
5. Repeat with the remaining potatoes, beef, sauce, and cheese.
6. Cover with foil and bake 45 minutes. Remove foil and bake an additional 15–20 minutes until potatoes are tender and cheese is melted and golden.
7. Let rest 10 minutes before serving. Garnish with parsley.
Notes
Use gluten-free flour and GF breadcrumbs for a GF version.
Add peas, mushrooms, or corn to the beef mixture for extra veggies.
Use Yukon gold potatoes for softer texture or russets for starchier thickening.
Leftovers reheat beautifully in the oven or air fryer.
