Description

Ingredients

**For the Soup Base**

1 lb ground beef

1 tbsp olive oil or butter

1 small onion, diced

1 carrot, shredded

2 cloves garlic, minced

3 cups potatoes, peeled and diced

3 cups chicken broth

2 cups milk

2 tbsp all-purpose flour

2 cups shredded cheddar cheese

½ cup sour cream

½ tsp smoked paprika

Salt & pepper, to taste

Chopped bacon

Green onions

Extra shredded cheese

Croutons or toasted burger buns


Instructions

1. In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess grease.

2. Add onion, carrot, and garlic. Sauté 3–4 minutes until vegetables soften.

3. Stir in diced potatoes, chicken broth, salt, pepper, and smoked paprika. Bring to a boil, then reduce heat to medium-low.

4. Cover and simmer 10–12 minutes until potatoes are tender.

5. In a small bowl, whisk flour into milk until smooth. Slowly pour the mixture into the soup, stirring constantly.

6. Simmer 5–7 minutes until thickened.

7. Remove from heat, stir in shredded cheddar cheese and sour cream until melted and creamy.

8. Taste and adjust seasoning.
