This Caramelized Banana Carrot Cake is a moist, spiced dessert packed with sweet bananas, fresh carrots, and warm spices. Topped with rich caramelized flavor and a soft crumb, this easy cake is perfect for any occasion or cozy treat.
Ingredients
2 ripe bananas, mashed
1 1/2 cups grated carrots
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
Optional topping:
Caramel sauce or cream cheese frosting
Instructions
1. Preheat oven to 350°F (175°C) and grease a cake pan.
2. In a large bowl mix mashed bananas, grated carrots, brown sugar, granulated sugar and oil.
3. Add eggs and vanilla extract and whisk until smooth.
4. In another bowl whisk together flour, baking soda, baking powder, cinnamon, nutmeg and salt.
5. Gradually add dry ingredients to the wet mixture and mix until just combined.
6. Pour batter into the prepared cake pan.
7. Bake for 35–40 minutes until a toothpick inserted in the center comes out clean.
8. Allow the cake to cool before adding caramel sauce or frosting if desired.
9. Slice and serve.
Notes
Use very ripe bananas for the best natural sweetness.
Do not overmix the batter to keep the cake soft.
Add chopped walnuts or pecans for extra texture.
Store in an airtight container for up to 3 days.
