Description

Ingredients

**For the Pasta**

8 oz penne pasta (or any short pasta)

Salt, for boiling water

**For the Cajun Sauce**

1 tbsp olive oil

1 tbsp butter

12 oz smoked sausage, sliced (andouille or kielbasa)

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

½ cup chicken broth

½ cup grated Parmesan cheese

1 tbsp Cajun seasoning (adjust to spice level)

½ tsp smoked paprika

¼ tsp crushed red pepper flakes (optional)

Salt & pepper, to taste

**For Garnish**

Fresh parsley, chopped

Extra Parmesan cheese


Instructions

1. Cook pasta according to package instructions until al dente. Drain, toss lightly with oil, and set aside.

2. In a large skillet over medium heat, add olive oil and butter. Once melted, add sliced sausage and cook for 4–5 minutes until browned.

3. Add garlic and sauté for 30 seconds until fragrant.

4. Add sliced bell pepper and cook for 2–3 minutes until slightly softened.

5. Pour in heavy cream and chicken broth. Stir in Cajun seasoning, smoked paprika, and red pepper flakes. Simmer for 3–4 minutes until sauce thickens slightly.

6. Add Parmesan cheese and stir until melted and creamy.

7. Toss in the cooked pasta and stir until fully coated in sauce. Adjust seasoning with salt and pepper.

8. Garnish with parsley and extra Parmesan before serving.
