Description

This Easy Broccoli Chicken Divan Casserole is creamy, cheesy, and comforting — yet lightened up for a healthy twist! Made with tender chicken, broccoli, and a flavorful sauce, it’s the ultimate family-friendly comfort food dinner!

Ingredients

**For the Casserole**

2 cups cooked chicken breast, shredded or cubed

3 cups fresh broccoli florets (lightly steamed)

1 can (10.5 oz) cream of chicken soup (or healthy homemade version)

½ cup plain Greek yogurt (or sour cream)

¼ cup low-sodium chicken broth

½ tsp garlic powder

½ tsp onion powder

¼ tsp paprika

Salt & pepper to taste

**For the Topping**

½ cup shredded cheddar cheese

¼ cup grated Parmesan cheese

¼ cup breadcrumbs (or crushed Ritz crackers)

1 tbsp melted butter

Instructions

1. Preheat oven to 375°F (190°C). Lightly grease a 9×9-inch or 8×11-inch casserole dish.

2. In a large bowl, combine cream of chicken soup, Greek yogurt, chicken broth, garlic powder, onion powder, paprika, salt, and pepper. Stir until smooth.

3. Add the cooked chicken and broccoli to the sauce mixture, tossing gently until everything is well coated.

4. Spread the mixture evenly into the prepared baking dish.

5. In a small bowl, mix breadcrumbs (or crackers) with melted butter.

6. Sprinkle cheddar and Parmesan cheese evenly over the casserole, then top with the breadcrumb mixture.

7. Bake for 25–30 minutes, until hot and bubbly with a golden topping.

8. Let rest for 5 minutes before serving.

9. Serve warm and enjoy the creamy, comforting goodness of this healthy classic!

Notes

Use rotisserie chicken to save time.

Substitute cauliflower or mixed veggies for a twist.

To make it gluten-free, use gluten-free soup and breadcrumbs.

Leftovers reheat perfectly — great for meal prep!
