These easy breakfast burritos are hearty, delicious, and perfect for busy mornings. Filled with fluffy eggs, savory sausage or bacon, cheese, and your favorite veggies, they’re great fresh or made ahead and frozen for quick grab-and-go meals.
Ingredients
4 large flour tortillas
6 large eggs
1/4 cup milk
1/2 pound breakfast sausage or bacon, cooked and crumbled
1 cup shredded cheddar cheese
1 cup diced potatoes or hash browns, cooked
1/2 cup diced bell peppers
1/2 cup diced onion
Salt and black pepper, to taste
1/2 teaspoon paprika or taco seasoning (optional)
Olive oil or butter for cooking
Instructions
1. In a bowl, whisk eggs with milk, salt, pepper, and paprika if using.
2. Heat oil or butter in a skillet and sauté onions and bell peppers until softened.
3. Add eggs to the skillet and scramble until cooked through. Set aside.
4. Cook sausage or bacon separately if not already cooked.
5. Warm tortillas in a dry pan or microwave until soft and pliable.
6. Assemble burritos: divide eggs, sausage/bacon, potatoes, and cheese among tortillas.
7. Fold sides inward and roll tightly into burritos.
8. Serve warm or toast in a skillet for a crispy exterior.
9. To freeze: wrap each burrito in foil and freeze up to 2 months.
Notes
Swap sausage for chorizo for extra flavor.
Great with salsa, sour cream, or avocado.
