Description

These Boston cream pie cookies are soft, rich, and filled with creamy vanilla pudding, then topped with a smooth chocolate glaze. This easy homemade treat delivers all the classic Boston cream pie flavors in a fun cookie form.


Ingredients

Cookies:

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

Filling:

1 cup vanilla pudding (prepared)

1/2 cup heavy cream (whipped)

Chocolate Glaze:

1/2 cup semi-sweet chocolate chips

1/4 cup heavy cream


Instructions

1. Preheat oven to 350°F and line a baking sheet with parchment paper.

2. In a bowl, cream butter and sugar until light and fluffy.

3. Add egg and vanilla extract, then mix until combined.

4. In another bowl, whisk flour, baking powder, and salt.

5. Gradually add dry ingredients to wet ingredients and mix into a soft dough.

6. Scoop dough onto baking sheet and flatten slightly.

7. Bake for 10 to 12 minutes until lightly golden, then cool completely.

8. Mix vanilla pudding with whipped cream to create a light filling.

9. Spread or pipe filling onto half of the cookies, then top with remaining cookies.

10. Heat heavy cream and pour over chocolate chips, then stir until smooth.
