Blueberry Swirl Sugar Cookies are soft, buttery, and bursting with fruity sweetness. Classic sugar cookie dough is swirled with juicy blueberry flavor, creating beautiful, bakery-style cookies that are as stunning as they are delicious.
Ingredients
For the cookies:
2 1/2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
3/4 cup butter, softened
1 cup sugar
1 large egg
1 tsp vanilla extract
For the blueberry swirl:
1 cup blueberries (fresh or frozen)
2 tbsp sugar
1 tsp lemon juice
Instructions
1. Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.
2. In a small saucepan, cook blueberries, sugar, and lemon juice over medium heat until thick and jammy. Let cool.
3. In a bowl, whisk flour, baking powder, and salt.
4. In another bowl, beat butter and sugar until light and fluffy.
5. Add egg and vanilla and mix well.
6. Gradually add dry ingredients and mix until a soft dough forms.
7. Gently swirl cooled blueberry mixture into the dough—do not fully mix.
8. Scoop dough onto the baking sheet, spacing cookies apart.
9. Bake for 10–12 minutes until edges are set but centers are soft.
10. Cool on the baking sheet for 5 minutes, then transfer to a rack to cool completely.
Notes
• Swirl gently for a marbled look.
• Chill dough if too soft.
• Delicious with a lemon glaze on top.
