Description

Black Bean Sweet Potato Tostadas are healthy, colorful, and packed with bold flavor. Crispy tostadas get layered with roasted sweet potatoes, seasoned black beans, creamy avocado, fresh toppings, and zesty lime for an easy meatless dinner everyone will love.


Ingredients

4 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon chili powder

1/2 teaspoon cumin

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 can black beans, drained and rinsed

8 tostada shells

1 avocado, sliced

1 cup shredded lettuce

1/2 cup diced tomatoes

1/4 cup crumbled feta or cotija cheese

2 tablespoons chopped cilantro

1 lime, cut into wedges

Hot sauce for serving, optional


Instructions

1. Preheat oven to 425°F and line a baking sheet with parchment paper.

2. Place diced sweet potatoes on the baking sheet.

3. Drizzle with olive oil and season with chili powder, cumin, smoked paprika, salt, and black pepper.

4. Toss until evenly coated.

5. Roast for 25 minutes, stirring halfway through, until tender and caramelized.

6. Meanwhile, heat black beans in a small saucepan over medium heat for 5 minutes.

7. Arrange tostada shells on serving plates.

8. Top each tostada with warm black beans and roasted sweet potatoes.

9. Add avocado slices, shredded lettuce, diced tomatoes, and crumbled cheese.

10. Garnish with cilantro and serve with lime wedges and hot sauce if desired.


Notes

Use baked tostada shells for a lighter option.

Add pickled onions or jalapeños for extra flavor.

Cotija cheese gives the most authentic flavor, but feta also works well.

Store toppings separately for easy meal prep and crisp tostadas.
