Ingredients
2 cups cooked shredded chicken (rotisserie works great)
¾ cup BBQ sauce
1 bag (32 oz) frozen tater tots
1½ cups shredded cheddar or Colby Jack cheese
½ small red onion, finely diced (optional)
2 green onions, sliced
Cooking spray
Optional toppings: sour cream, ranch dressing, pickled jalapeños
Instructions
1. Preheat oven to 425°F (220°C). Spray a large baking sheet with cooking spray.
2. Spread tater tots in a single layer and bake according to package directions until crispy and golden.
3. Meanwhile, toss shredded chicken with BBQ sauce and warm gently in a skillet or microwave.
4. Remove tots from oven and evenly spoon BBQ chicken over the top.
5. Sprinkle shredded cheese generously over everything.
6. Return to oven for 5–8 minutes, until cheese is fully melted and bubbly.
7. Remove from oven and top with red onion and green onions.
8. Serve hot with sour cream or ranch if desired.
